Deep fried loach

Baby loach fish are deep fried while they are still alive. A strong but lovely taste.

Mukago and peanuts

Mukago are really small potatoes (dark brown in the photo). Here they are fried in butter with peanuts (light brown in the photo). Lovely.

Octopus head

Kusaya

This is horse mackerel cooked in sauce that is many decades old. It stinks. But it didn't taste too bad.

Daikon no happa

Horseradish leaves are fried slowly on a low heat. Then sake, soy sauce and snapper stock powder are added. Once mixed up, egg is then added to finish it off. Lovely!

Gourd

Shavings of gourd with carrot, eringi mushrooms and fried tofu.

Dried horseradish

Slices of horseradish are dried and then soaked in sweet vinegar.

Fuki no ha no tsukudani

Here, the leaves of the butterbur plant are boiled three times and then boiled again in seaweed stock with mushrooms, sake, soy sauce and sanshyo seeds. Butterbur is pretty bitter so boiling it a few times makes the bitterness go away.
